Delicious and Healthy Thin Sandwich Bread for a great Summer Sandwich

Makes 8 Sandwich Thins
Time 6 Hours Aprox (30 minutes active time, 5.5 Hours Passive Time)
Ingredients Baker's Percentages
200 grams (1 ¾ cups) Whole wheat flour 100%
160 grams ( ⅔ cups) Water 80%
60 grams ( ¼ cup) Sourdough Starter* 30%
5 grams (1 tsp) Salt 2.5%
* You can also use sourdough discard for this recipe
Directions
Pour the water in the bowl of a stand mixer, add the sourdough starter. Mix with a silicone spatula until the sourdough starter dissolved in the water. Add the whole wheat flour and the salt.Mix with your dough whisk until you get a cohesive dough. Cover the dough with a towel and let it rest for 30 minutes.
Place it on your working table, use your hands to knead the dough lightly for a couple minutes, form a ball of dough and place it in a greased bowl. Cover the dough with plastic wrap and let the dough ferment in a warm place until it doubles in size or place it in the fridge for a long cold fermentation overnight
Place the dough on a floured surface and extend the dough with a rolling pin, make sure that the thickness of your dough is at around ½ an inch. Use a biscuit cutter or a big cookie cutter to cut the dough
Place the dough on a prepared baking sheet with parchment paper or a silicone mat and cover with a plastic wrap or a plastic lid, let the dough proof for about 1 hour.
Pierce some holes in the dough with a fork, place the dough in a preheated oven at 375 degrees Fahrentheit or 190 degrees Celsius for about 15 minutes.
As soon as you take your bread from the oven place it on a cooling rack. Let the bread cool down for at least 10 min before slicing open.

Tiempo 6 Horas Aprox (30 minutos tiempo activo, 5.5 Horas Tiempo Pasivo)
Ingredientes Porcentajes de panadero
200 gramos (1 ¾ tazas) harina integral 100%
160 gramos ( ⅔ tazas) Agua 80%
60 gramos (¼ de taza) masa madre* 30%
5 gramos (1 cucharadita) Sal 2.5%
* También puedes usar descarte de masa madre para esta receta
Direcciones
Vierta el agua en un tazón, agregue la masa madre. Mezcle con una espátula de silicona hasta que la masa madre se disuelva en el agua. Agregue la harina de trigo integral y la sal. Mezcle con su batidor de masa hasta obtener una masa cohesiva. Cubra la masa con una toalla y déjela reposar durante 30 minutos.
Coloque la masa en su mesa de trabajo, use sus manos para amasar la masa ligeramente durante un par de minutos, forme una bola de masa y colóquela en un recipiente engrasado. Cubra la masa con una envoltura de plástico y deje que la masa fermente en un lugar cálido hasta que duplique su tamaño o colóquela en el refrigerador para una larga fermentación en frío durante la noche.
Coloque la masa sobre una superficie enharinada y extienda la masa con un rodillo, asegúrese de que el grosor de su masa sea de alrededor de ½ pulgada ó 1.25 cms . Use un cortador de galletas grande para cortar la masa.
