Sourdough Peanut Butter

This Bread is super soft and crumbly with a rich Peanut Butter Flavor



Makes 1 Loaf

Time 9 Hours


Ingredients Baker's Percentages

300 grams (1 ¾ cups + 2 tbsp) All Purpose Flour 100%

100 grams (1/3 cup) Sourdough Starter 33%

300 grams (1 ¼ cups) Peanut Butter 100%

240 grams (1 cup) Milk 80%

30 grams (⅜ cup) Granulated Sugar 10%

5 grams or a tsp of salt 1.6%


This is a recipe from the Great Depression Era, the peanut butter substitutes butter and eggs in this bread

Directions

  1. Place all the ingredients in the bowl of a stand mixer, use the hook attachment to mix all the ingredients until you have a very soft and cohesive dough for about 20 minutes.

  2. Take the dough out of the stand mixer bowl and make a ball of dough, place the dough in a proofing container for about 4 hours or until it doubles in size.

  3. When your dough is ready take it out of the bowl, shape the bread into a roll shape and place the dough in 4x8 inch or10x25 cm loaf pan, make sure the dough extends well to cover the whole area of the pan. Cover the pan with a plastic wrap and let the bread proof for about 2 more hours or until the highest point of the dough meets the rim of the pan.

  4. Bake at 350 degrees fahrenheit or 180 degrees Celsius for about 50 minutes or until a skewer tester inserted near the center of the loaf comes out clean. Let the bread cool off on a wire rack for at least 30 minutes before slicing it.

Ingredientes Porcentajes de panadero

300 gramos (1 ¾ tazas + 2 cucharadas) de Harina Todo Uso 100% 100 grams (1/3 taza) Masa Madre

300 gramos (1 ¼ tazas) de Crema de Cacahuate 100%

240 gramos (1 taza) Leche 80%

30 gramos (⅜ taza) Azúcar granulada 10%

5 gramos o una cucharadita de sal 1.6%


Esta es una receta de la Era de la Gran Depresión, la mantequilla de cacahuate sustituye la mantequilla y los huevos en este pan.

Direcciones

  1. Coloque todos los ingredientes en el tazón de una batidora, use el accesorio de gancho para mezclar todos los ingredientes hasta que tenga una masa muy suave y cohesiva durante unos 20 minutos.
