Sourdough Italian Herbs & Parmesan (Subway Style Bread)

This Sourdough Subway Style Bread recipe is very easy, tastes better and is healthier than the original!

This wonderful, aromatic Italian herbs and Parmesan Bread is perfect in taste, appearance and texture; great for any sandwich.
Makes 4 12 inch Loaves
Time 12 Hours
Ingredients Baker's Percentages
500 grams (4 cups) All Purpose Flour 100%
250 grams (1 cup) Water 50%
100 grams (1/3 cup) Starter 20%
60 grams (1/4 cup) Olive Oil 12%
40 grams (1/4 cup) Sugar 8%
10 grams (1/2 tbsp) Salt 2%
Toppings
2 Tbsp Italian Herbs
1/2 cup Fresh Grated Parmesan Cheese
1/2 tsp Garlic Powder (Optional)
Directions
Pour the water, olive oil, sourdough starter, sugar and salt in a stand mixer. Use the hook attachment to mix your ingredients for 30 seconds then add the all purpose flour little by little and keep mixing. Mix until all the ingredients are combined and the dough starts to pull off the walls of the bowl. Take the dough out of the bowl and finish kneading by hand for about 5 minutes until the dough is soft and elastic. You can finish kneading your dough in your stand mixer but I prefer to do it by hand so I can feel when the dough is ready. When the dough is ready, make a ball and place it in a greased bowl. Cover with plastic wrap and place it in the fridge to proof overnight.
The next morning take the dough out of the fridge and divide it in 4 equal pieces. Use a scale to get equal pieces. Stretch your dough and pre-shape it into a cylinder. Sprinkle some flour on top and cover with a towel. Let the dough rest for 10 minutes.
After 10 minutes finish shaping your dough. Roll the dough well until you reach the desired length. Make sure to fix the edges of your bread. Place them on a prepared baking sheet and sprinkle some flour on top. Cover with a lid or plastic wrap and let them proof in a warm place for about 4 hours.
After 4 hours brush the loaves with water. Sprinkle a mix of 2 tablespoons of Italian herbs and if you like you can add ½ tsp of garlic powder for an extra boost of flavor. Grate some fresh parmesan cheese on top.
Place them in a preheated oven at 425 degrees Fahrenheit or 220 degrees Celsius with some steam. To create the steam I place my hot cast iron pan in the base of the oven and then add 5 cups of ice.
After 20 minutes the loaves should be ready. Take them out of the oven and place them on a cooling rack. Wait at least 5 minutes before cutting them open.
